Istrian Truffle Season at Hiša Franko

With the beginning of October, one of the most fragrant moments of autumn arrives at Hiša Franko: the season of black and white Istrian truffles. This year, once again, they come from the Motovun Forest, where they are foraged for us by the Prodan family, third-generation truffle hunters and our long-time friends.

Truffles are one of those gifts of nature that can never be fully planned. Their availability changes from week to week, depending on the soil, the weather and the rhythm of the forest. It is precisely this unpredictability that is part of their magic, making every truffle season at Hiša Franko slightly different from the one before.

In the Hiša Franko kitchen, we weave them into the autumn flavours of the Soča Valley, bringing the intensity of truffles together with local ingredients, wild mushrooms, mountain cheese, grains and trout.

This season, you will find them in dishes including:

/ Corn beignet with creamy salted mountain cheese and black truffles,
/ Barley with wild mushrooms, blackberries, hazelnuts and black truffle,
/ Queen trout with lentils, brown butter and beetroot dip, and white truffle.

The season is short, and nature decides how long it will last. 

These days, autumn in the Soča Valley carries the scent of Istria.
