At the end of 2025, Ana Roš will open her first restaurant outside Slovenia — JAZ Poreč, a vibrant new dining destination on the Istrian coast, developed in collaboration with Croatia’s leading hospitality brand, Valamar.
JAZ Poreč is more than just an international expansion — it’s a continuation of something deeply personal. “From the mountains of the Soča Valley, where Hiša Franko is located, you can see Istria,” Ana says. “It’s not just a view — it’s almost a feeling of going home. Istria has always been part of my kitchen and part of me.”
Building on the success of JAZ Ljubljana, which opened in 2023 as a more casual, everyday expression of Ana’s cuisine, the Poreč location brings that same bold, seasonal spirit to the sea. The menu will be shaped by the rhythm of the coast — spontaneous, expressive, and hyperlocal, sourcing ingredients from Istrian farmers and foragers Ana has long supported.
But JAZ is not an outpost. It’s a grounding. A return to familiar landscapes through a new lens — from breakfast to late-night cocktails, always infused with the pulse of the day, the people, and the place.
“JAZ is shaped by spontaneity and rhythm — not formality,” Ana says. “It’s a space where technique meets intuition. Where you eat with your hands if you want. Where flavors come first, and rules come last.”
Set on the Poreč waterfront, JAZ will welcome locals and travelers alike year-round — creating a meeting place between Slovenia and Croatia, tradition and creativity, land and sea.
