What is Ana Roš along her team doing again? This time, Hiša Franko will host chef Jorge Vallejo who will bring extraordinary Mexican flavours to the house shaking the first days of spring up.

On 25 March 2020, chefs Ana Roš and Jorge Vallejo will prepare a tasting menu with 12 courses, which will reflect culinary traditions from Posočje and Mexico, and awaken your taste buds. Hurry up and book a table now! Two seatings will be available: at 16.00 (4 pm) or at 20.30 (8:30 pm)!

Jorge Vallejo was born in 1981 in Mexico City. After studying management and the culinary arts at the Culinary Center of Mexico (Ambrosia), Vallejo spent sometime on the high seas working on Princess Cruises. He later worked and spent time in the kitchens of restaurants like Noma, Pujol, and the St. Regis Hotel’s Diana Restaurant. In 2012, he decided to open Quintonil with his wife Alejandra Flores. For eight years, the restaurant has been the core in maintaining the dialogue that Vallejo has established about the memory and current circumstances of Mexico’s culinary tradition. Quintonil has been on The World’s 50 Best Restaurants list since 2015, where it currently ranks twenty-fourth globally and eleventh on the Latin America’s 50 Best Restaurants list.

Jorge Vallejo also reflects on the gastronomy’s relationship to the environment, culture, and society, emphasizing on how this impacts Quintonil, and the greater community. This has prompted him to participate in different forums and give lectures nationwide and abroad he has also collaborated with research, and conservation projects for both gastronomy and its context.
