A beautiful day in the Soča valley

A beautiful day in the Soča valley, too hot for January, great conditions for serious hiking. I did an hour of walking up in the mountain and got inspiration for this one: whole wheat spaghettini in a bisque of crayfish, cauliflower cream and chips, candy lemon drops, green pistacchio oil and bottarga.

On Monday we are preparing a four hand diner with a promising Portuguese chef Luca Bardini in our castle restaurant. My focus is the open air market in Ljubljana and its stands with root vegetables.
